  • 500 g potatoes (about 1 lb), peeled or unpeeled, preferably yellow-fleshed
  • 250 g San Marzano tomatoes (about ½ lb), but any good, ripe tomato will work
  • 3 tablespoons extra virgin olive oil (EVOO)
  • 2 garlic cloves, lightly crushed
  • 1 teaspoon dried oregano
  • ½ teaspoon fine sea salt, plus more to taste
  • Freshly ground black pepper, to taste
  • Fresh basil leaves, optional

Method

1. Prepare the Potatoes

Wash and scrub the potatoes. Leave the skin on for a more rustic dish, if desired.

Cut them into medium-sized pieces, keeping them as evenly sized as possible.

2. Cook the Potatoes

Heat the EVOO in a large skillet over medium heat.

Add the crushed garlic and cook for about 1 minute, until fragrant.

Add the potatoes, season with salt and pepper, and cook for 15–20 minutes, turning occasionally, until they are golden on the outside and almost tender.

3. Add the Tomatoes and Oregano

Cut the fresh tomatoes into quarters and add them to the skillet.

Sprinkle with the oregano and gently toss everything together.

Cook the rustic potatoes with tomatoes for another 10–15 minutes, until the tomatoes have softened and released their juices and the potatoes are completely tender.

If the potatoes are browning too quickly, lower the heat and add a small splash of water.

4. Finish and Serve

Taste and adjust the seasoning.

Remove the garlic if you prefer a milder flavor, or leave it in for a more pronounced garlic taste.

Serve hot, with a drizzle of EVOO and a few fresh basil leaves, if desired.
