Crisp on the outside, creamy in the centre. Perfect for breakfast, a mid-afternoon treat, or an elegant dessert.

If you love easy yet impressive bakes, these spelt flake baskets will quickly become a favourite. The base is naturally sweetened with apple purée, lightly spiced with cinnamon, and baked until golden. The filling? Either a cloud-like ricotta cream or a generous spoonful of Nutella. Finished with fresh berries, they look as beautiful as they taste.

For the baskets
  • 120 g spelt flakes

  • 100 g apple purée /applesauce 

  • 1 tbsp honey (or preferred sweetener)

  • A pinch of ground cinnamon

  • A little vegetable oil /neutral oil for greasing

For the ricotta cream
  • 250 g cow’s milk ricotta 

  • 150 g icing sugar / powdered sugar 

To fill & decorate
  • 100 g Nutella

  • Mixed berries  

Method

Start with the base. In a mixing bowl, combine the apple purée (applesauce) with the spelt flakes. Stir well until evenly combined. Add the honey and a pinch of cinnamon and mix again.

Lightly grease the edges of a muffin tin with vegetable/neutral oil. Divide the mixture between the muffin cups and, using the back of a spoon, press it firmly onto the base and up the sides to form a basket shape. Make sure it’s well compacted so it holds once baked.

Bake in a preheated oven at 160°C (325°F / Gas Mark 3) for 20–25 minutes, or until lightly golden around the edges. Allow the baskets to cool completely before carefully removing them from the tin.

Meanwhile, prepare the ricotta cream. Place the ricotta in a large bowl and add the icing (powdered) sugar. Whip with an electric mixer until smooth, light and velvety.

Once the baskets are completely cool, fill them with the ricotta cream or a generous spoonful of Nutella. Top with fresh mixed berries and serve.


💡 Tips
  • Add a little lemon zest to the ricotta cream for a fresh twist.

  • The baskets can be made ahead and stored in an airtight container for up to 2 days; fill just before serving for best texture.
