These succulent prawns can be ready in minutes! The marinating takes a little longer, but itβs absolutely worth the wait β the orange and chilli infuse the prawns with vibrant, zesty taste.
Serves 2, Preparation 5 mins + 1 h marinating, Cooking less than 5 mins
- 300g shell-off prawns, fresh or frozen
- 1 tsp chilli flakes
- zest and juice 1 orange
- 2 tbsp EVOO – Extra Virgin Olive Oil
- White ground pepper, a pinch
- 1 tbsp rice flour or maize flour for thickening
Method
In a bowl, mix orange juice, orange zest, white pepper, EVOO, and chilli flakes.
Add the peeled prawns and leave to marinate for at least 1 hour. Remove the prawns and set aside.
Heat a non-stick pan and pour in the marinade.
Bring to a boil and whisk in rice or corn flour to thicken the sauce quickly, now add the prawns to the pan and cook for 1β2 minutes on each side until just done.
Remove from heat and serve immediately with a sprinkle of orange zest for extra aroma.
