This Panna Cotta version is made by using vegetable soy drink, Agar-Agar and an addition of Amaretto di Saronno.
4 Portions, Preparation time 10 mins, Cooking time 10 mins + 2 hrs in the fridge
- 250 ml vegetable soy drink
- 250 g vegetable cream
- 2 tablespoons caster sugar
- 20 g corn starch
- a dash of Amaretto di Saronno liqueur
- 3-4 Amaretti biscuits
- 1 level teaspoon of agar agar
Method
In a small saucepan, dissolve the cornstarch in half of the room temperature soy drink, stirring with a whisk. As soon as it has dissolved, pour in the remaining soy drink and start heating everything on the cooker adding the cream, sugar, agar agar and a drop of Amaretto di Saronno, stirring until all the dry ingredients are dissolved without forming lumps.
Bring to the boil always stirring for another 2-3 minutes. Turn off the flame, pour into ceramic ramekins and leave to cool, then refrigerate for at least 2 hours. When serving, garnish with Amaretti biscuits.
