These hazelnut cocoa olive oil biscuits are perfect if you’re looking for a no-butter treat. The hazelnut flour gives a deep, naturally nutty flavour, while the cocoa adds richness and intensity. Olive oil keeps the texture soft and delicate.

The result is a rustic, slightly crumbly chocolate biscuits with a soft centre—ready in just about 30 minutes.


Ingredients for about 8-10 biscuits, Prep time 15 mins, Cook time about 15 mins

  • 120 g hazelnut flour (about 1 cup finely ground hazelnuts)
  • 30 g plain flour (about 1/4 cup all-purpose flour)
  • 20 g cocoa powder (about 3 tablespoons)
  • 40–50 g sugar (about 3–4 tablespoons, adjust to taste)
  • 60 ml extra virgin olive oil (about 1/4 cup)
  • A handful of whole hazelnuts
🔁 No hazelnut flour?

Hazelnut flour gives these biscuits a rich, naturally nutty flavour, however the recipe is still delicious with plain flour (all-purpose flour) for a simpler version.

  • The texture will remain great
  • The flavour will be milder
  • Add chopped hazelnuts if you still want a nutty twist

The dough is soft and slightly sticky. To make shaping easier:

  • use disposable gloves, or
  • lightly oil your hands

This helps keep the biscuits neat and prevents sticking.


Method

  1. Preheat the oven to 180°C / 350°F / Gas 4 and line a baking tray with parchment paper.
  2. In a bowl, whisk the egg with the sugar until slightly creamy and well combined.
    Add the extra virgin olive oil and mix again until smooth.
  3. In a separate bowl, combine the hazelnut flour, plain flour, and cocoa powder.
  4. Add the dry ingredients to the wet mixture and stir until a soft, slightly sticky dough forms. If needed, adjust with a little extra flour (if too wet) or a small drizzle of oil (if too dry).
  5. Fold in a handful of whole hazelnuts for extra crunch.
  6. Shape the dough into 8-10 rustic biscuits, slightly flattening them with your hands, place them on the prepared baking tray.
  7. Bake in static oven for about 15 minutes, until set and slightly firm at the edges. Let them cool on the tray for a few minutes.
