Italian Savoury Wheat Fritters (Frittelle di Grano Cotto ) are a traditional Italian recipe from Southern Italy. Made with pre-cooked wheat, cheese, and fresh herbs, these fritters are golden and crispy on the outside, soft and creamy inside. 1 cup (200 g) pre-cooked wheat (grano cotto)

2 eggs

3–4 tbsp grated Parmigiano or Pecorino cheese

2–3 tbsp plain flour (more if needed)

2–3 tbsp chopped fresh herbs (parsley, basil, sage or rosemary)

Salt and pepper to taste

Vegetable oil for frying, approx. 100–120 ml (6–8 tbsp)
Method
Mash the cooked wheat slightly. Mix in eggs, cheese, herbs, salt, pepper. Gradually add flour until the mixture forms a thick batter.

Pour 100–120 ml (6–8 tbsp) of vegetable oil into a frying pan—enough to cover at least 1–1.5 cm of the bottom—and heat over medium heat. Using enough oil ensures the fritters cook evenly, develop a golden, crispy exterior, and keep the interior soft and creamy.
Scoop portions of batter into the hot oil.

Fry until golden and crisp on both sides, about 2–3 minutes per side.

Drain on kitchen paper.
