Oven-baked gorgonzola-stuffed pears, the sweetness of pears and the tangy-spicy flavour of gorgonzola cheese are mixed. Gorgonzola is an Italian blue cheese from the northern regions of Lombardy and Piedmont.
This might be either a starter or a sweet treat.
The pear-gorgonzola pairing is quite popular in Italy, especially in the North, in fact these two ingredients are also a perfect combination in a risotto.
Serve 4, Preparation 20 mins, Cooking 20 to 25 mins
- 4 firm and not too ripe pears (Kaiser or Conference)
- Italian Spicy or Dolce Gorgonzola, to taste
- Chopped walnuts and a few whole ones, a handful
- Sesame seeds, to taste
- salt and black pepper, a pinch
Method
oast the sesame seeds without adding oil or other fat, set aside.
Cut the pears in half lengthwise, leave the skin on, hollow them out with a teaspoon to create a hollow, removing the seeds. In a bowl, mix the pulp with the gorgonzola cheese, a pinch of salt and ground black pepper.
Place the pears on a baking tray lined with baking paper, bake in a static oven at 180 C / Gas 4 / 350 F about 15 minutes until soft but not overly soft.
Remove from the oven and turn it off. Stuff them with the pear and gorgonzola mixture.
If necessary, to speed up the melting of the cheese, simply place them back in the oven off by using its heat.
Top with chopped, whole walnuts and toasted sesame seeds and serve.
