Makes about 20 biscuits, Preparation time 20 mins, Cooking time 30 mins

  • Yellow potatoes, 150 g
  • White Flour, 200 g
  • Baking powder, a teaspoon
  • Brown sugar, 70 g
  • Unsalted soft butter, 40 g
  • Egg, 1
  • Sifted Cocoa powder, 60 g
  • A pinch of fine salt

 

Method

Peel and boil the potatoes in plenty of unsalted water until soft, drain and mash them. Set aside to cool down.

Melt the butter, pour it over mashed potatoes, add the egg with sugar, a pinch of salt and mix until smooth. Sift the cocoa powder into the mixture and stir evenly. Add everything to the sifted flour along with the baking powder. Shape the biscuits as you like.

Preheat the oven to 180°C / 350 F / Gas 4.

Grease a baking tray, place the biscuits on a tray and now in the oven about 20 mins.  Take them out of the oven, allow to cool and sprinkle with powdered sugar.
