Fluffy gluten-free and dairy-free muffins flavoured with cinnamon and with some fruity granola in the mix. A super yummy sweet snack or great for breakfast, as quick to prepare as they are to devour in no time.



Makes approx. 15 muffins, Preparation 10 mins, Baking 20-25 mins

  • 280 g gluten-free rice flour
  • 40 g potato starch or maize flour
  • 140 g brown sugar
  • 2 tablespoons cinnamon powder
  • Fruity granola 50 g
  • 1 teaspoon baking powder
  • a pinch of fine table salt
  • 200 ml soy milk or almond milk
  • 50 ml sunflower oil

Method

Place the dry ingredients in a bowl, so rice flour, potato starch, baking powder, cinnamon, sugar, fruity granola, finally a pinch of salt and mix.

In another bowl mix soy milk and oil, then add it to the flours bowl a little at a time. Mix until you get a smooth not too liquid combination.

Preheat the oven to 180 °C / 350 F / Gas 4.

Transfer the mix to the muffin cups or lightly oiled ceramic ramekins, fill them 2/3 full, bake in the preheated oven about 20-25 minutes.
Allow to cool at room temperature before removing the muffins.
