Fennel is low in calories and very tasty, especially when baked. We have added cured ham to make them even more interesting.
Serves 4, Preparation 15 mins, Cooking 20 mins
- Fresh Fennels, 4
- Cured Ham, 150 g
- Pecorino cheese grated, 2 heaped tablespoons
- EVOO – Extra Virgin Olive Oil, to taste
- Unsalted Butter, a knob
- Black pepper, a tsp
Method
Pre-heat the oven to 200° C / Gas 6
Cut the fennels into half-inch slices, blanch them for 5 minutes, drain and dry them, start make a first layer by arranging them in a lightly oiled oven dish.
Add over the slices of cured ham evenly, make another layer with more fennel slices and finish with slices of cured ham, a sprinkling of grated Pecorino and a pinch of pepper.
Drizzle with oil and bake in a fan oven to 180° C for about 20 minutes, until they begin to have a brownish colour on the surface.
