Bacon-wrapped carrots perfect as an appetiser or side dish. We didn’t glaze them because carrots are sweet enough, we just seasoned them with garlic as a bruschetta-style, then sprinkled with thyme. They can be prepared in just a few minutes.
Serve 2, Preparation 5 mins, Cooking about 15-20 mins
- 4 carrots
- Bacon rashers, 8
- Fresh thyme 2 sprigs or a tablespoon of dried thyme
- 1 peeled garlic clove
- EVOO – Extra Virgin Olive Oil, a drizzle
Method
Preheat the oven to 200 C / 400 F / Gas 6.
Peel the carrots and cut them in half lengthways.
Rub them with a clove of garlic on both sides, wrap each one in a rasher of bacon. Or maybe alternate bacon-wrapped and un-wrapped.
Tip: if the bacon rashers are too wide or too long, just cut them in half lengthwise.
Sprinkle with fresh or dried thyme, a drizzle of EVOO and place them on a baking tray lined with baking paper, in the oven for about 15-20 minutes 200 C fan assisted oven.
Take them out and serve.
