This pan-fried swordfish is a quick Mediterranean-style dish. Juicy swordfish slices are cooked with cherry tomatoes, black olives, garlic, and oregano, creating a flavourful meal ready in just 25 minutes. 


Serves 4, Preparation time: 10 minutes, Cooking time: 15 minutes

  • 4 slices of fresh or frozen swordfish
  • A handful of ripe cherry tomatoes, halved
  • 1 tablespoon dried oregano
  • 1 garlic clove, minced
  • a handful of pitted black olives, chopped
  • 4 tablespoons of Olive Oil
  • salt and freshly ground black pepper, to taste

 

Method

Heat 4 tablespoons of olive oil in a non-stick pan. Add the garlic and sauté until golden. Add the tomatoes and olives, cooking over medium heat until the tomatoes soften.

Add the swordfish slices to the pan. Spoon the hot sauce over the fish to coat with flavours. Cook on low heat for 5 minutes, then cover and cook for another minute.

Turn off the heat, season with salt and black pepper, and serve your swordfish with tomatoes and black olives.
