Supplì is a simple croquette made from rice cooked in tomato sauce and stuffed with mozzarella fior di latte. It is basically one of the most famous Roman street foods.
Supplì are also nicknamed ‘telephone supplì’ because when you open them, the mozzarella inside stretches out like a telephone wire.
Makes: 15 Supplì | Preparation time: 30 mins | Cooking time: 30 mins
- italian-carnaroli-rice, 200 g
- napolina-tomato-passata, 150 g
- buffalo-mozzarella: 150 g
- A splash of red wine
- Whisked Eggs: 2
- Extra Virgin Olive Oil (EVOO): 1 tablespoon
- Breadcrumbs: to taste
- Hot vegetable stock: 500 ml
- Salt and pepper: to taste
- Peanut oil for deep-frying, to taste
Method
Dice Mozzarella, set aside.
Heat olive oil in a frying pan and brown the minced meat for about 5 minutes. Pour in a splash of red wine and let it simmer until it has completely evaporated. Now add the tomato passata, stir and allow to cook 15 minutes.
Add the rice directly into the tomato sauce, pour hot vegetable stock one ladle at a time until the rice is fully cooked, making a sort of risotto.
Place the risotto in a large bowl and allow it to cool completely before moving on to the next step.
Grease the palm of your hands to prevent the risotto from sticking to it, take a good dollop of rice, place a diced piece of mozzarella in the middle. Shape into a small cylinder
Dip them in beaten eggs and then in breadcrumbs.
Heat the seed oil, fry Supplì until it turns an even golden colour.
