Pizzaiola sauce is one of those humble Italian recipes that proves you don’t need many ingredients to create something delicious. Its name comes from pizza maker style because it’s made with the same classic flavours found on a traditional Italian pizza: tomatoes, garlic, oregano, and olive oil.

Steak Pizzaiola was always one of those comforting family meals that appeared on the table when time was short but still in need of something homemade and satisfying. The sauce is simple, fragrant, and perfect for transforming even an inexpensive cut of beef into a flavourful dinner.


Servings 4, Prep time 10 mins, Cooking time approx 15 mins

  • 14 oz (400 g) beef steaks or veal steaks
  • 17.5 oz (500 g) canned peeled tomatoes, crushed
  • A bunch of ripe cherry tomatoes
  • 3 garlic cloves
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons dried oregano
  • Salt, to taste

Method

1. If needed, tenderize the steaks lightly with a meat mallet. You can cut the steaks into smaller slices. 

 

2. Heat the olive oil in a large skillet over medium heat and add the garlic cloves.

3. Cook until the garlic is lightly golden and fragrant. Remove it if preferred, or leave it in the sauce for extra flavour.

4. Add the crushed tomatoes, a few ripe cherry tomatoes, oregano, and a pinch of salt. Stir well and simmer for 10–15 minutes until the sauce has thickened slightly.

5. Place the steaks directly into the skillet and spoon the sauce over them.

6. Cook for 2-3 minutes per side, or longer depending on the thickness of the meat and your preferred doneness.

7. Serve immediately with an extra drizzle of olive oil and plenty of crusty bread to soak up the sauce.

Notes

  • San Marzano tomatoes will give the sauce a richer, sweeter flavour.
  • Fresh ripe tomatoes can be used instead of canned tomatoes.
  • Add a pinch of red pepper flakes for a little heat.
  • Pizzaiola sauce is also delicious with chicken, veal, pork chops, or eggs.
