Bread balls made from re-used old bread, with tasty, slightly spicy celery leaves. We also added a leftover cooked ham. With just a few ingredients you can create simple and tasty recipes, while watching your household budget.
The amount of meatballs that come out depends on the amount of bread you have on hand, as these are left-overs.
Serves 2-3, Preparation 10 mins, Cooking about 30 mins
- Old bread, to taste
- Celery leaves, to taste
- Grated Parmigiano or Pecorino cheese, 2 tbsp for the mix + 4 tbsp for coating
- 1 minced garlic clove
- 1 egg
- Salt and pepper, a pinch
- Olive Oil, to taste
Method
Preheat the oven to 180 C / GAS 4 /350 F.
Chop the bread into pieces and soak it in water until soft without being mushy, then squeeze it out.
Chop up the celery leaves, add them to the pieces of bread with one egg, the grated cheese, chopped garlic, salt and pepper, mix with your hands until smooth.
Tip: if too dry just add another egg, if too mushy, add more grated cheese.
With wet hands, start forming the patties and cover them with grated cheese.
Place them on a baking tray lined with baking paper, drizzle with olive oil and bake in a preheated, static oven about 20 minutes.
