Classic Italian Bruschetta (pronounced Brus-KET-ta) comes from the Italian word abbrustolito, meaning “toasted.” This traditional Italian dish is all about toasted bread, often made with stale bread from the previous day. Rustic bread, ciabatta, or durum wheat semolina bread work best for achieving that perfect crunch.

Bruschetta toppings have evolved over centuries, but the simplest and most authentic version uses just garlic, extra virgin olive oil (EVOO), and salt—letting the bread itself shine.

  • 250 g rustic bread, sliced into finger-sized slices
  • 2 cloves garlic, peeled
  • Extra virgin olive oil (EVOO), to taste
  • Salt and pepper: to taste

Method

Toast the bread slices until golden and crisp, either in the oven, on a griddle pan, or in a non-stick pan without oil. Ensure both sides are evenly crunchy.

Rub each slice of bread on both sides with garlic cloves. This infuses the bread with a gentle garlic flavour.

Drizzle the toasted bread with extra virgin olive oil and sprinkle with a pinch of salt and freshly ground black pepper.

Serve immediately while your Classic bruschetta is still warm and crisp.

  • Bread choice matters: Rustic sourdough, ciabatta, or semolina bread all work beautifully.

  • Extra flavour: For a richer taste, drizzle a little more EVOO or add fresh chopped tomatoes and fresh basil.
