A vibrant, sweet-and-savoury salad that works beautifully on its own for a light lunch or as a side dish to grilled meats or seafood. Try pairing it with crusty bread or a glass of chilled white wine.
Serves 2, Preparation time 15 minutes, Cooking time less than 10 minutes
- 250g/9oz baby spinach, washed
- 7-8 underripe strawberries, sliced lengthways
- a handful of underripe blueberries
- 6-7 walnuts, coarsely chopped
- 50 g bacon strips or cubes
- Goat cheese, shaved
- 1 lime, grated zest of ½ lime, whole lime juice
- a pinch of salt
- ½ teaspoon ground black pepper
- 3 tablespoons olive oil + a drizzle
Method
Blend together the lime juice, black pepper and olive oil. Set aside.
Heat a drizzle of olive oil, pan-fried the bacon until crisp. Set aside.
Combine the baby spinach, crispy bacon, shaved goat cheese, strawberry and blueberry in a large bowl, drizzle with the lime dressing, add a pinch of salt, toss gently to coat all ingredients.
Sprinkle the chopped walnuts and lime zest over the top just before serving.
