A salad with only spinach pleased us, yet then adding fresh strawberries and blueberries, goat cheese, walnuts and bacon, all seasoned with olive oil and lime zest appealed to us even more. It works either as a side dish and main dish.


Serves 2, Preparation time 15 minutes, Cooking time less than 10 minutes

  • 250g/9oz baby spinach, washed
  • 7-8 strawberries, unripen, sliced lengthways
  • a handful of blueberries, unripen
  • 6-7 walnuts, coarsely chopped
  • 50 g bacon strips or cubes
  • Goat cheese, shaved
  • 1 lime, grated zest of ½ lime, whole lime juice
  • a pinch of salt
  • ½ teaspoon ground black pepper
  • 3 tablespoons olive oil + a drizzle


Blend together the lime juice, black pepper and olive oil. Set aside.
Heat a drizzle of olive oil, pan-fried the bacon until crisp. Set aside.

Combine the baby spinach, crispy bacon, shaved goat cheese, strawberry and blueberry in a large bowl, add the lime/oil dressing and a pinch of salt, stir gently until combined.

Sprinkle chopped walnuts and lime zest on top.
