Delicious roasted asparagus topped with mozzarella and grated pecorino cheese to complete this savoury dish perfect as a side dish as well as a main course.

Serves 2, Preparation time 10 mins, Cooking time 20-25 mins

  • 1/2 kg green Asparagus
  • Grated Pecorino cheese, a handful
  • Fresh Mozzarella, to taste
  • salt and pepper, to taste
  • EVOO – Extra Virgin Oilve Oil, to taste



Rinse, peel and trim the asparagus.

Blanch them first for 3-4 minutes, then place them in a bowl with ice and water or run them under cold running water. This way they will still be firm and retain their bright colour.

Line a baking tray with baking paper and arrange the asparagus in a row. Sprinkle mozzarella chunks, a generous handful of grated pecorino cheese, a pinch of salt and black pepper and a drizzle of extra virgin olive oil on top.

Bake to 180 C / Gas Mark 4 / F 350 about 20 minutes. Serve.
