We spiced them up with a mix of turmeric and Pecorino cheese and these baked onions turned out a nice golden yellow with an extra kick.
Serves 2-3, Preparation 15 mins, Cooking approx 30 mins
- About 8 small yellow onions
- A level teaspoon of turmeric powder
- Grated Pecorino cheese, about 4 tablespoons
- Ground black pepper, a level tablespoon
- Fine salt, a pinch
- Extra Virgin Olive oil, 3 tablespoons + a drizzle
Method
Preheat oven to 190 C / 375 F / Gas 5.
Mix grated Pecorino cheese with a level teaspoon of turmeric and a teaspoon of black pepper in a bowl. Stir.
Peel the onions, make a cross with the knife on each onion to open them up a little. Add a pinch of salt inside each one. Place them in a lightly oiled baking dish, sprinkle with the turmeric /black pepper/ Pecorino mix, drizzle a drizzle of oil over each one and add a drop of water to the sides of the baking dish.
Cover with aluminium foil, bake in the preheated oven, cook for about 20 minutes, drizzle each onion with the hot oil in the baking tray, remove the aluminium foil and leave them uncovered cooking in the oven another 10 to 15 minutes until a golden crust forms on top.
Serve.
