Chocolate Muffin filled with strawberry, easy to make and a nice idea for something different. We topped it with a fresh strawberry sauce aka coulis that we got with just a few ingredients without using stove.
Makes about 6-7 muffins | Preparation time: 20 mins | Cooking time: approx. 15 to 20 mins
- 00 g white sieved type 00 flour or Plain Flour / All Purpose Flour
- 100 gr of sugar
- 30 gr of sifted unsweetened cocoa
- a teaspoon of sifted baking powder
- 80 ml milk
- Chocolate chips, to taste
- 1 egg
- 30 ml sunflower oil
- 6 whole Strawberries per muffin + 6/7 halved for the coulis
- 50 g Icing sugar
- 1 tbsp lemon or lime juice
Method
Let’s start with the fresh strawberry coulis:
Put the halved strawberries in a bowl with the icing sugar and the lemon or lime juice, whisk until smooth. Set aside.
Preheat the oven to 180 C/ 350 F/ GAS 4 .
Whether muffin cases or ceramic ramekins, start by buttering and lightly flouring them, set aside.
Take two bowls, one for dry ingredients (flour, cocoa, sugar and yeast, mixed) and one for liquids (egg, milk and oil, mixed).
Now pour the liquids into the bowl with the solids.
Mix everything together quickly adding the chocolate chips.
Pour the mixture into buttered and floured muffin or ramekin moulds, filling them halfway with the mixture and place a whole strawberry in the centre of each, then cover it entirely with other mixture.
Bake in a preheated static oven and bake for 15 to 20 minutes – time depends on your oven.
Remove from the oven, leave to cool and dress with the previously prepared strawberry coulis.
