Smoked salmon with button mushrooms and a few leaves of rocket make a good combination in the frying pan, it just takes a few minutes for a great meal. We livened it up with a fresh chilli and it was perfect just like that.
Serve 2, Preparation 10 mins, Cooking 10-15 mins
- Penne pasta, 170 g
- Smoked salmon, 100 g
- Button Mushrooms, sliced, 80 g
- Rocket salad, a bunch
- Garlic cloves, 2
- Fresh chilli pepper, 1
- Extra Virgin Olive Oil (EVOO) or Olive Oil, 3 tablespoons
- Salt and Black Pepper, a pinch
Bring to boil oil a pot of water, as soon as it boils, plunge penne.
Meantime heat 3 generous tablespoons of oil, stir-fry garlic cloves along with fresh chilli pepper.
Throw in sliced mushrooms, fry for a few minutes, add chopped smoked salmon and chopped rocket salad, the fresh chilli pepper, add a pinch of salt and black pepper only at the end, stir.
Drain penne al dente, saving some cooking water, add penne to the pan and stir, add a little cooking water, mix and serve with a drop of raw oil on top.
