Super yummy and mouth-watering these candied lemon slices are such an easy sweet snack to enjoy in the afternoon break or even as an end to a meal.
Approx. 25 lemon slices, Preparation 5 minutes + 24 hours soaking, Cooking 10 minutes
- 3 lemons medium-sized
- 200 g caster sugar
- 200 g water at room temperature
Method
Wash lemons under running water, slice them about 5 mm thick. Remove any inner seeds.
Place the lemon slices in a bowl full of cold water and soak them 24 hours. This step is crucial for the lemons to lose their acidity and bitterness.
After this time, drain the lemon slices, weigh them and considering their weight, use equal amounts of water and sugar.
For example, if they weigh 200 g, you would use 200 g water and 200 g sugar.
Place water and sugar together in a large non-stick pan, bring to the boil, add lemon slices to the syrup that will start to form, stirring often gently with a wooden spoon or turning them up with kitchen tongs.
When the syrup has dried, turn off the heat and place the slices on a sheet of baking paper, let them cool for a few minutes and serve.
