Whether you decide to bake the apples or leave them fresh, this healthy light mid-afternoon or even breakfast snack is so easy to prepare and its ingredients can be sourced just about everywhere.
You can use any apple, we used the Pink Lady variant.
Serves: 2 | Preparation time: 15 mins
- Pink Lady apple: 2
- Italian Ricotta cheese: 80 g
- Mixed Nuts and Dried Fruits: to taste
- Some lemon juice
- Honey, a drizzle
- Powdered Cinnamon, a pinch
- a knob of butter, unsalted
Method
Coarsely chop the nuts with a knife, leaving some whole aside.
After rinsing and drying the apples, cut off the cap, core and scoop out the flesh to leave enough room for the filling. Sprinkle inside a few drops of lemon to prevent them from blackening.
Brown the apple flesh in a frying pan for 2 minutes with a knob of butter, then transfer to a bowl and leave to cool to room temperature.
Now add the Ricotta, chopped nuts and honey, mix.
Fill each apple with the mixture, a final sprinkling of cinnamon and the whole nuts kept aside. Serve.
Tip: If you choose to oven bake them instead, simply bake them covered with their caps for about 25-30 minutes in a static oven to 180 C / 350 F / Gas 4.
