Perfect as a tasty starter, sometimes also as an accompanying side dish for a main course of meat or fish, and to be personalised as you like. It is also a tasty idea to get children to eat vegetables.
Serves: 2 | Preparation time: 10 mins | Cooking time: 15 mins
- Courgette: 1-2
- Grated Mozzarella & Cheese mix: to taste
- Cherry tomatoes: 3-4
- Pitted Black olives: 3-4
- Anchovy fillets in olive oil: 2-3
- Oregano, dried: to taste
- Extra Virgin Olive Oil (EVOO): to taste
- Salt: to taste
Method
Chop the anchovy fillets.
Dice the tomatoes.
Slice the black olives.
Put them in a bowl with a couple of tablespoons of EVOO, a pinch of salt, dried oregano, mix and keep aside.
You can replace the cherry tomatoes with tomato sauce and season as above.
Cut the courgettes into slices about 1 cm thick and place them on a baking tray lined with baking paper.
Lightly brush each slice with a little EVOO, add a pinch of salt and pre-bake in the oven for 5 minutes.
Remove from the oven without turning it off, garnish each slice with the chopped tomato / anchovy / black olives mix, add cheese or alternate the ingredients as you prefer.
Return to the oven for a further 10 minutes or until the cheese is melted.
