Grilled peaches served with a low-fat yoghurt flavoured with thyme and mint are great for a light snack mid-afternoon or at the end of a meal.

Serves 4, Preparation time 20-25 mins, Cooking time 15 mins

  • 4 peaches, preferably firm and not too soft
  • Fresh thyme, to taste
  • 5 chopped fresh mint leaves
  • 1/2 lemon zest
  • Brown sugar, to taste
  • Low-fat yoghurt, 150 g
  • Pistachio grain, to taste


Place the yoghurt in a bowl together with the chopped mint and thyme leaves and the grated lemon zest, mix and leave for at least 20 minutes in the refrigerator.

Halve and stone the peaches to dip then in brown sugar.

Toast the pistachio nuts for a few seconds – do not add butter or oil.

Heat a griddle or frying pan, grill the peaches on the flesh side for about 2 minutes together with a few sprigs of thyme, then leave to cool.

Arrange the peach slices on a plate, garnish with a little yoghurt sauce, add the toasted pistachio granules and serve.
