Grilled Peach with Mint and Thyme Yoghurt

These grilled peaches served with a low-fat yoghurt flavoured with thyme and mint is excellent for a light mid-afternoon snack or end of a meal. No need to use a grill if you don’t want, just a quick pan-seared will also do.


Serves 4, Preparation time 20-25 mins, Cooking time 15 mins

  • 4 peaches, preferably firm and not too soft
  • Fresh or dry thyme, to taste
  • 5 chopped fresh mint leaves
  • 1/2 lemon zest
  • Brown sugar, to taste
  • Low-fat yogurt, 150 g
  • Pistachio grain, to taste

Method

Halve and core peaches.

Put the yoghurt in a bowl together with chopped mint and thyme leaves, lemon zest, stir well and let it flavour for at least 20 mins in the fridge.

Put the flesh- side into brown sugar.

Toast pistachio grains for a few seconds – do not add butter or oil.

Heat a griddle-pan or a pan, grill the peaches on the flesh- side about 2 mins along with a few sprigs of thyme, then let them cool down.

Take off the yoghurt from the fridge, place peach wedges on a plate, garnish with some yoghurt sauce, add the toasted pistachio grain and serve.
