A quick, no-fuss salad with few ingredients and a great outcome. We used tinned mackerel because we like it and it is mostly handy. If you are not a mackerel fan, tuna is an ideal substitute.
Serving 2, Preparation 5 minutes
- Yellow tomatoes, about 15
- 1 tinned mackerel, 125 g
- Apulian taralli, a handful
- EVOO – Extra Virgin Olive Oil, 2 tablespoons
- Dried thyme, to taste
- A pinch of salt
- Fennel seeds, to taste
Method
Halve the cherry tomatoes, drain the mackerel and break it up roughly, put everything in a bowl, two tablespoons of EVOO, a pinch of salt and dried thyme, stir. If you like some lemon juice too, why not, it’s good.
We added a handful of fennel seeds as well and then a coarse crumble of olive oil taralli pugliesi.
