A quick, fresh summer salad with few ingredients and a great outcome. We used tinned mackerel because we like it and it is mostly handy. If you are not a mackerel fan, tuna is an ideal substitute.
Serving 2, Preparation 5 minutes
- Sun gold tomatoes, about 15
- Tinned mackerel in olive oil, 125 g
- Taralli, a handful
- EVOO – Extra Virgin Olive Oil, 2 tablespoons
- Dried thyme, a teaspoon
- A pinch of salt
- Fennel seeds, to taste
Method
Halve the tomatoes, drain the mackerel from its oil and coarsely chop it, place everything in a bowl and season with two tablespoons of EVOO oil, a pinch of salt and dried thyme, and a handful of fennel seeds, mix.
Coarsely crumble the taralli pugliesi and garnish the salad.
