These prawns can be made in no time at all, the marinating takes just a little longer but worth the wait.
Serves 2, Preparation 5 mins + 1 h marinating, Cooking less than 5 mins
- 300g shell-off prawns, fresh or frozen
- 1 tsp chilli flakes
- zest and juice 1 orange
- 2 tbsp EVOO – Extra Virgin Olive Oil
- White ground pepper, a pinch
- 1 tbsp of rice flour or maize flour for thickening
Method
In a bowl put the orange juice, ground white pepper, 2 tablespoons EVOO and a tablespoon of chilli pepper, add the peeled shrimps and leave them to marinate for at least 1 hour.
Remove the marinated prawns and set them aside on a plate,
Heat a non-stick pan, add the juice where the prawns were marinated and as soon as it boils, add a tablespoon of rice or corn flour and whisk quickly to thicken. Add the prawns, cook them quickly on both sides in the sauce for about 1-2 minutes at the most.
Remove from the pan, serve with a sprinkling of orange zest.
