The fruit-cheese combo it’s a classic flavourful match, whether using fresh fruit or fruit spread and cheese with bread or crackers. In this case, however, we simply grilled some not-too-ripe apricots and paired them with Cheddar cheese that melted like snow in the sun with a drizzle of honey for a great starter or snack or even an end of the meal. The thyme added a little Mediterranean touch. Using apricots with a firm texture also benefits the flavour, in our opinion. This is because their flavour remains perfectly balanced between sweet and slightly sour. Honey or maple syrup will do the rest.
Serve 2, Preparation 5 mins, Cooking less than 10 mins
- 4 fresh apricots not too ripen, halved and pitted
- slices of mature Cheddar cheese, to taste
- a couple of thyme sprigs
- a drizzle of Acacia honey or Maple syrup
Method
Heat a griddle-pan until very hot.
Cook the apricots with thyme sprigs for about 5 mins or until they are soft yet nicely firm.
Top each apricot half with a small slice of Cheddar and let it melt.
Drizzle some acacia honey and serve.
