Parmigiano cheese gives a lot of flavour and crunchiness to these humble potatoes whilst along with Sardinian Myrtle they get a twist of Mediterranean scent.

Serve 2, Preparation 5 mins, Cooking 25 mins
- 400 g humble potatoes
- 3 sprig of Myrtle
- Salt and Black Pepper, to taste
- Grated Parmigiano cheese, 50 g
- EVOO – Extra Virgin Olive Oil, 2 tbsp
- 1 garlic clove, minced
Preheat the oven to 180°C / 350 F / Gas 4.
Wash and dry potatoes, do not peel them. Depending on their size, you can halve some of them.
Before tossing potatoes in the oven, coat them in Parmigiano cheese, minced garlic, salt, black pepper and a generous drizzle of Evoo and mix together.
Oil the Myrtle sprigs and rub them on potatoes, then add also them in the baking tray lined with parchment paper, cook in the preheated oven for about 25 mins.
Ready and serve.
