This is one of the many ways for recycling stale bread.
We have made a Marinara sauce which is only tomato, garlic and oregano. Nothing else. Stale bread fits perfectly here.
Just for the record, this is not the Tuscan Pappa al Pomodoro Soup even if it resembles it. Although it is made with stale bread and tomato sauce, it has other ingredients. Here it is: pappa-al-pomodoro-tuscan-bread-and-tomato-soup
Serve 2-3, Preparation 10 mins, Cooking 25 mins
- Stale bread, to taste
- Water, to taste
- Tomato sauce, to taste
- Dried oregano, 1 tablespoon
- Garlic, peeled and sliced, 2 cloves
- EVOO – Extra Virgin Olive Oil, 2 tablespoons
- Optional: 1 chilli pepper
- Salt and pepper, a pinch of both
Method
Break stale bread into chunks, soak it in enough water to get it soft.
Then squeeze it well to get rid of excess water.
Finely slice the garlic cloves and fry them together with the chilli pepper (optional but recommended) for 3-4 minutes in 2 tablespoons of EVOO. Add bread chunks, they have to take on flavour thus fry and season them for 2-3 mins or until golden, stirring often so they won’t burn.
Add the tomato sauce, mix everything together and cook for at least 15 mins on a medium-high flame, add a pinch of salt and pepper, and at the end of cooking when the bread has disintegrated and become one with the tomato sauce, sprinkle with oregano, mix and serve.
