Griddled Peaches

Griddled peaches served with a low-fat yoghurt flavoured with thyme and mint, excellent for a light mid-afternoon snack or as a dessert.


Serves 4, Preparation time 20 mins, Cooking time 15 mins

  • 4 peaches
  • Fresh or dry thyme, to taste
  • Chopped fresh mint leaves, 5
  • 1/2 grated lemon zest
  • Brown sugar, to taste
  • Low-fat yogurt, 150 g
  • Toasted Pistachio grain, to taste

Method

Halve peaches, remove the core, then cut them into wedges.

Tip: better to use firm peaches and not too soft or ripe, otherwise they can flake while griddled.

Dip the flesh- side into brown sugar.

Toast pistachio grains for a few seconds – do not add butter or oil.

Heat a griddle-pan, grill the peaches on the flesh- side for about 2 mins along with a few sprigs of thyme, then let them cool down.

Put the yoghurt in a bowl together with chopped mint and thyme leaves, grated lemon zest, stir well and let it flavour for at least 20 mins by storing it in the fridge.

Take off the yoghurt from the fridge, place peach wedges on a plate, garnish with some yoghurt sauce, add the pistachio nuts and serve.
