Pink Sauce. Red mixed white makes pink, thus here is an easy to make creamy sauce quickly prepared by using tomato sauce and heavy cream, perfect to dress any pasta or even lasagna.
For a lighter version, Ricotta cheese would be great as well.
Pink Sauce is not vodka sauce albeit alike. Unless you have any vodka somewhere…
Serves 4, Preparation time 5 mins, Cooking time 20 mins
- 250 g Tomato sauce
- 200 g Heavy cream or Ricotta
- 1 small onion
- Grated Parmesan cheese, a handful
- Extra Virgin Olive Oil, 2 tbsp
- Salt, to taste
Finely chop the onion.
In a pan with 2 tablespoons of Evoo fry the chopped onion over a gentle flame.
Then add the tomato sauce, a pinch of salt and black pepper, stir and cook over medium heat for 10 minutes.
Now add the heavy cream or ricotta, stir and cook the pink sauce for about 5 minutes over medium heat.
Turn off the heat and add some grated Parmesan cheese and stir.
Serve it with the pasta you prefer or to season lasagne.
Tip: Use a light spreadable cream cheese ? Sure.
Better avoiding cottage cheese though.
