Parmesan gives a lot flavour and crunchiness to these humble potatoes whilst along with Myrtle they get a twist of Mediterranean scent.

Serve 2, Preparation time 5 mins, Cooking time 20 mins
- 400 g humble potato
- 3 sprig of Myrtle
- Salt and Black Pepper, to taste
- Grated Parmesan cheese, 40 g
- EVOO – Extra Virgin Olive Oil, 2 tbsp
- 1 garlic clove – optional
Preheat the oven to 180°C.
Wash and dry the potatoes.
Before tossing potatoes in the oven, coat them in Parmesan, salt, black pepper and a generous drizzle of Evoo, stir together a smash garlic clove if you like.
Do not overlap potatoes.
Add the sprigs of Myrtle, cook them in a preheated oven for about 20 minutes always to 180 C.
After this time, place the baking-tray under the oven-grill and brown potatoes for a a couple of mins. Ready.
