Soda Bread also known as Irish Bread is a soft and tasty baking bread with baking soda, very quick to make at home because it is without yeast.
It is not Italian yet we liked the idea of preparing it by using Italian flours like spelt flour and 00 type.
Soda bread is made with buttermilk or even milk. Buttermilk tastes more acidulous than milk and contains less lactose.
This is for a 500 g loaf, Preparation time 5 mins, Cooking time 40-45 mins
- 400g of spelt flour
- 100g Italian ‘00’ flour/ Standard Bread Flour
- 1.5 tsps of sea salt
- 1 tsp bicarb of soda
- 400ml of cold buttermilk
- Optional – 1 tbsp of poppy seeds
Tip: You might not need all the buttermilk, just enough to make a workable dough.
Don’t add so much buttermilk that it becomes too sticky.
In a bowl, mix the flours, then add salt and bicarb of soda, give a little mix and then little by little adding buttermilk and work it into a malleable dough.
Shape it into a round and place it on a floured baking
parchment on a baking tray. Add poppy seeds if you like.
Make an ‘X’ cut in the centre of the loaf with a sharp knife.
Put in the pre-heated oven and bake for about 40-45 mins at 200 C.
Let it cool before cutting it.
