A very easy appetizer to prepare.
There are so many different types of goat cheese, each with its own unique flavor and texture. We have chosen a creamy, mild ones which combined with hazelnuts and honey works heavenly.
For those ones who instead are not fell in love yet with goat’s cheese, we recommend to use ricotta, it will work fine as well.
Serves: 4 | Preparation time: <10 mins | Cooking time: 10 mins
- Rye or Wholemeal Bread: 200 g
- Hazelnuts – Whole or Grain, 40 g
- Spreadable Goat’s cheese, to taste
- Acacia honey, 1 tbsp
- Black pepper, a pinch
- Fresh thyme, a sprig – Rosemary as substitute
Toast for few mins the hazelnuts in a saucepan, both if you are using the whole ones and the grains along with thyme sprig – no butter or oil addition. Chop coarsely the whole ones with a knife.
Tip: If you use a mixer, don’t chop them too much, you don’t have to get a powder.
Mince thyme sprig leaves,
Toast the bread slices in the oven at 180° for 5 mins – or even on a grill or in a pan.
Spread some goat’s cheese on each slice and garnish the bruschettas with minced toasted hazelnuts, a drizzle of honey, minced thyme and a pinch of black pepper if you want.
