We had some fun in our kitchen by playing again with puff pastry, it’s so easy to turn some ready-rolled puff pastry into a bunch of delightful starters. We have realized these savoury stuffed pinwheels, as a quick yet also substantial appetizer, just perfect for a brunch or a buffet.

- Ready-rolled puff pastry: 320 g (about 1 standard-sized roll)
- Cooked Ham: 150 g
- Radicchio: as needed
- Gorgonzola or blue cheese: 60 g
- Mozzarella, optional
- Parmigiano Reggiano, grated: to taste
- Eggs: 1
- Thyme, dried: to taste
- Anchovy paste: as needed (about 2-3 tsp)
- Poppy seeds: as needed
- A pinch of salt
In a bowl beat up the egg along with a tbsp of water.
Cut Radicchio in little strips.
Roll out the puff pastry and divide it into two parts.
Tip: Prick the puff pastry with the prongs of a fork so that it doesn’t retain moisture and doesn’t swell up during baking.
Place the slices of ham on the first half along with cubes of gorgonzola and sprinkle with grated Parmesan cheese.
Add the radicchio’s strips on the surface and roll the puff pastry on the long side creating a roll.
On the second half of puff pastry, put the anchovy paste all over the surface, add a generous handful of grated Parmesan cheese and add a few cubes of mozzarella if you want.
Cut both rolls by creating wheels of about 2 cm.
Brush each pinwheel with egg, then coat it in poppy seeds or dried thyme. Sprinkle them with a pinch of salt.
Place the pinwheels on an oven tray lined with baking paper.
Bake at 180°C for 10-15 minutes and leave them to cool a little before serving.
