Watermelon and Feta Salad

A fresh, cool salad based on an original combination: a watermelon paired with feta, seasoned with balsamic vinegar! It’s a healthy, peculiar dish ready in minutes. Try it as a starter or even for a light meal.

Serves: 2 | Preparation time: less than 10 mins

  • Watermelon, small-sized: 1
  • Feta: 50 g
  • Balsamic vinegar: 1 tbsp
  • Mint, fresh: about 5 leaves


Cut a couple of slices of watermelon, each about 2 cm thick. Remove the seeds and the rind, then cut the flesh into cubes.

Slice the feta in slightly smaller cubes or else crumble it a little with your fingers, Mix the feta and the watermelon in a bowl.

Wash the mint leaves and finely mince them. Add the mint to the bowl along with the balsamic vinegar. Stir well and serve.

Tip:  The best balsamic vinegar is the one produced in Modena, in the Emilia Romagna region. If you don’t have balsamic vinegar at hand, you can create it yourself. It will not be the same, of course, but it will give you a good result when paired with this salad. Dissolve a teaspoon of sugar in a tablespoon of red wine vinegar by stirring well; if necessary, you can also heat up the mixture so the sugar will dissolve more quickly. Wait until your home made balsamic vinegar is cold before adding it to salad.
