These delicious pastries are a great idea for an afternoon tea.
Makes: about 10 small pies| Preparation time 15 mins | Cooking time 10 mins
- Ready-rolled puff pastry: 320 g (about one standard-sized roll)
- Blueberries, fresh: 125 g
- Homemade Peanut Butter: 30 g
- Blueberry jam: 30 g
- Eggs: 1
- Icing sugar: as needed
Pre-heat the oven to 180°C.
Rinse the blueberries under cold running water and pat them dry with a clean kitchen towel. Beat up the egg and set both aside.
Unroll the puff pastry roll and prick the bottom with a fork. Using a glass or a pastry cutter, cut some discs out of the puff pastry.
Spread peanut butter and jam on half of the discs and top them with some fresh blueberries. Put the remaining discs on top of the other ones and brush some beaten eggs on the edges to seal them shut.
Bake at 180°C for about 10 minutes, then leave to cool and sprinkle with icing sugar before serving.
