A bit of grated Parmesan or Pecorino cheese and you can make these cute and very good baskets cheese as starter or side dish, filling them with what you like: they are a cute and tasty way to present a salad or even meatballs or rice. Just a few minutes, a frying-pan and your baskets parmesan are ready! I chose to fill them with a mixed salad with apple, crumbled walnuts, cheese flakes and toasted pumpkin seeds. Yummy!
4 baskets Parmesan, Preparation time 10 mins, Cooking time less than 10 mins
- 130 g. grated Parmesan or Pecorino cheese
- a frying-pan
- a medium-size bowl or a glass
Heat a non-stick frying pan, spread a few spoons of grated Parmesan on the bottom of non-stick pan and form a circle.
Cook to low flame and when the cheese begins to melt, with a kitchen spatula, remove gently the melted Parmesan and turn on the other side for few seconds, remove from the frying-pan and put it immediately on the bottom of the bowl to model it giving the shape of the basket.
As soon as it begins to solidify, turn upside downs the Parmesan basket and let it cool down. And so on for others.
Fill baskets with lamb’s lettuce and serve up!
Suggestions for salad seasoning: put washed and dried salad in a bowl with apple cut in pieces, coarsely chopped walnuts and a few pieces of Asiago or cheddar, a pinch of salt, a little EVOO, few drops of lemon juice and add the pumpkin seeds.
