Deep-fried food is not something to indulge in – but once in a while, there’s nothing better to treat ourselves than some golden, crispy fried fish. If you’re looking for a break from cod, try sardines.

- Sardines: 1 kg
- Lemons: ½
- Plain flour: as needed
- Salt: to taste
- Seed oil, for frying
Clean the sardines by removing the head and the innards.
Tip: If you can, ask your fishmonger to clean the sardines for you – it will save you a lot of time!
Rinse the sardines under cold running water and put them in a colander to dry slightly.
Put the flour in a shallow plate. Coat the sardines in flour and make sure to shake them slightly so that only a very thin layer of flour sticks to the sardines.
Heat up the oil and deep-fry the sardines in small batches. Remove them from the oil with a skimmer and put them on a plate lined with kitchen paper to absorb as much oil as possible.
Sprinkle with a pinch of salt and serve warm, garnished with a slice of lemon.
