Three basic ingredients : puff pastry, tomato sauce and cheese.
Good, simple to make and a smart idea to serve pizza muffins as starter.
Surely the use of puff pastry reduces the time it would take for the preparation of the dough, in fact this is a clever recipe that allows you to taste something delicious when you have limited time, looking for something budget friendly to cook, or simply you have puff pastry in the fridge to use.
Serves 4, Preparation time 5 mins, Cooking time 10 -15 mins
- Puff pastry roll, 1
- Tomato sauce, about 250ml
- Mozzarella or grated Parmigiano (or cheese you have to hand)
- a handful of dried oregano – or fresh basil
- Fine salt, a teaspoon
- Evoo – Extra virgin olive oil, to taste
- Cooked ham, 2 slices
Pre-heat the oven.
Unroll the puff pastry and with the bottom of a glass or dough-cutter make large disks. You can also use a knife to cut and get dough disks. The important thing is that they have to be quite big enough and be able to close themselves once stuffed.
In a bowl put tomato sauce, add the salt, add a tbsp of EVOO, a handful of dried oregano, a sprinkle of grated Parmesan cheese and stir together.
Tip: Not a fan of oregano? Replace it with fresh basil or thyme.
Dice the mozzarella and set it aside. Cut the ham into thin stripes.
Now fill each puff pastry disk with tomato sauce, add some cubes of mozzarella and the ham stripes, close them completely and go on like that with the other ones.
A little of Evoo again on each muffins and bake into the oven to 180 degrees for about 10 or 15 mins – it depends on the oven.
Let them cool down a bit at room temperature and serve.
