Peas and bacon is a very easy side dish to prepare, an enjoyable side dish and such a perfect combo to pair along with meat dishes or even potatoes or carrots dish, or also very good eaten on its own.
Serves 2, Preparation time 10 minutes, Cooking time 30 minutes
- 200 g. fresh or frozen peas
- 1 shallot
- 1 carrot
- 50 g. of smoked pancetta
- 4 tablespoons extra virgin olive oil (EVOO)
- salt and ground black pepper to taste
- Hot water, to taste
- 1/2 vegetable stock cube
- fresh basil, a bunch
Fill a glass with warm water, add the half of vegetable stock cube, stir and let it melt.
Cut into pieces both the carrot and the shallot.
In a saucepan heat the oil for a few minutes and add the shallot and let it brown, then add carrot pieces and let them cook for few mins.
Now add the bacon cubes and let them cook for few mins.
After 5 minutes add also the peas, combine the glass of hot water with the melted stock cube, add a pinch of salt and black ground pepper and stir.
Cook the peas on low heat covered by a lid for about 25 – 30 minutes.
At the end of cooking, add some basil Leaves, stir and serve your side-dish.
