Croutons with ricotta and chives: a fresh starter fast to prepare, I’m sure you will enjoy it.I had the chives to finish, and so, better looking into the fridge, I looked over the ricotta too and so, I put them together … heck! not bad! Adding a drop of oil and some poppy seeds, you can present this starter even for lunch with guests.
Serves 4, Preparation time 5 minutes
- 8 croutons (or toasted bread)
- 30 g. of fresh chives
- 250 g. of ricotta cheese
- some leaves of fresh parsley (options)
- extra virgin olive oil to taste (EVOO)
- salt and black ground pepper to taste
- poppy seeds to taste
Rinse and dry the chives, and cut it into little pieces. Leave some longer stem for garnish.
In a bowl pour the ricotta, add a spoon of EVOO and add the pieces of chives and of parsley. Add a pinch of salt (adjust according to your taste), a bit of ground black pepper and mix everything together.
Spread the mixture over each crouton. If you use toasted bread, put some oil on it and then stuff it with the compound.
Finally, garnish with some poppy seeds and long chives.
