A tasty and colorful salad with apple, Italian Bresaola, radishes. A combination of flavors that always work, both in winter and in summer.
Serves 2, Preparation time less than 10 minutes
- 200 g. Lamb’s lettuce
- 5/6 baby artichokes in olive oil
- Evoo – Extra Virgin olive oil, 2 tbsp
- Italian Bresaola, 100 g.
- Granny Smith apple, 1
- Fresh mint, 3 leaves
- Lemon juice, to taste
- 7 – 8 radishes
- Poppy seeds, a handful
- Pumpkin seeds, a handful
- Italian Asiago cheese, 40 g or red Leicester cheddar
- a pinch of salt
Wash and dry well the lamb’s lettuce, put in a bowl with few drops of lemon and a tbsp of EVOO. Wash and dry up radishes, cut them into rounds and put them in the bowl with salad as well.
Dry baby artichokes with kitchen paper to remove the excess oil, cut them in half.
Add to the bowl.
Mince the mint leaves, cut into strips both the apple and the Asiago cheese, add a pinch of salt and a handful of pumpkin seeds, add to the bowl and mix together.
Now add Bresaola slices, a tbsp of EVOO and a handful of poppy seeds.
Tips: You can substitute Bresaola with smoked ham
