A quick apricot crumble we put together to use up those apricots that were starting to look a bit old.
A knob of butter and some digestive biscuits and a hearthy dessert is ready to warm up your evening.
Serves: 2 | Preparation time: 10 mins | Cooking time: 20-30 mins
- Apricots: 200 g
- Brown sugar: 50 g
- Wholemeal flour: 50 g
- Digestive biscuits: 30 g
- Butter, unsalted: 25 g
Method
Tip: Make sure to select only ripe apricots.
Pre-heat the oven to 180°C.
Rinse the apricots and cut them into small pieces.
Put the apricot in a pan with just a knob of butter and ½ of the brown sugar. Pan-fry them for a few minutes, until they start caramelizing.
Crumble the biscuits and mix together in a bowl along with the remaining sugar, the flour and the butter. Stir thoroughly until all the ingredients are evenly distributed.
Take two small tarte moulds and fill them with the apricots. Cover the apricots with the biscuits mixture.
Bake at 180°C for 20-30 minutes or until the crumbs on top turn golden. Leave to cool a little before serving.
