Onions are cheap, available in any season, easy to prepare and perfect for every occasion: whether you’re having a fancy meal, a vegetarian dinner or just a simple week-day supper, these baked onions are always on the menu!
Serves: 2 | Preparation time: 10 minutes | Cooking time: 20 minutes
- White onions, medium-sized: 4
- Garlic: 1 clove
- Parsley, fresh: 1 sprig
- Thyme, fresh: 1 sprig
- Extra virgin olive oil (EVOO): 2 tbsp
- Breadcrumbs: as needed
- Parmesan or Pecorino, grated: as needed
- Salt and pepper: to taste
Preheat the oven to 180°C.
Clean the onions and place them in a saucepan full of salted boiling water. Blanch the onions for about 3 minutes, or until they become a little soft.
Peel and mince garlic clove along with parsley and thyme. Seasoning them with a pinch of salt and black pepper.
Grease the bottom of a baking dish and place the onions. Top each onion with a generous amount of the garlic and herbs mixture and drizzle with some olive oil.
Delicately pour water in the baking dish, just about enough to create a 5 mm liquid layer on the bottom. This will prevent the onions from burning.
Sprinkle breadcrumbs and Parmesan on top of the onions, then bake for 15 minutes at 180°C.
Turn on the grill function on your oven and bake for a further 5 minutes.
Allow the onions to cool at room temperature before serving.
