Cauliflower balls

Cauliflower balls can be easily both as a tasty appetizer and as a second dish, as well as an interesting alternative way to eat cauliflower differently and give it a little more personality!


Serves 2, Preparation time 10 minutes, Cooking time less than 15 minutes

  • 1 cauliflower
  • 30 g grated Parmigiano cheese
  • 2 eggs
  • breadcrumbs, to taste
  • a sprig of parsley
  • Turmeric, 1 tablespoon
  • salt and black ground pepper, to taste
  • Evoo – Extra Virgin Oilve oil or Peanuts oil for frying

Method

Clean and cut cauliflower into 4 and boil it in salted water for about 10 minutes.

Drain, put it in a bowl and mash it with a fork, add an egg, a pinch of salt and black ground pepper, a teaspoon of powdered turmeric, grated Parmigiano and the chopped parsley.

If the mixture is very soft, add 1-2 tablespoons of breadcrumbs.

Knead until mixture is smooth.

With wet hands, start to shape cauliflower balls.

Pass them in the other egg and then in bread crumbs and heat the vegetable oil in a frying pan.

As soon as the oil starts to sizzle, put balls and turn them on each side occasionally until they are golden on both sides.

Remove from the pan with a skimmer, place them on a plate covered  with a couple of kitchen paper sheets, add a pinch of salt, let them cool down for few mins and then serve up.
